While soft in style, Merlot has a way of engaging drinkers looking for something different. A silky and well-balanced wine, Merlot can often be overlooked as a strong contender in a world of bold reds, but in some ways, it comes alive as a secret weapon.

Wine Making Notes

For 2021 vintage started later than usual with reds picking in April and early May. This was due to lower than average temperatures during the months prior to harvest. The mild and cooler weather was quite beneficial to the ripening process of the reds, allowing a long stint of tannin ripening. Only the most balanced fruit made the cut for this blend. Each individual parcel was crushed and fermented separately in temperature controlled stainless steel vessels. After desired tannins and colour was sustained, the wine was pressed off skins during fermentation. The wine was matured using French oak for a period of 12 months. After maturation was completed, selected parcels were blended together and a light fining before going to bottle.

A lifted bouquet of florals, raspberries, dark cherries, plum and purple mulberries with layers of spice.


Palate

Generous flavours of raspberries, dark cherries and spices dominate the palate which balance together with the soft tannins offering a silky finish.

Mediterranean grilled vegetables and veal scaloppine pizzaiola.
