Wine Making Notes
We strive to source fruit across the whole Margaret River region, with the northern fruit offering intense tropical characters while the southern picks add refined focus and length to the final blend. Our Sauvignon Blanc usually comes into the winery first at the peak of its freshness, with aromas ranging from cassis bud to guava coulis. Meanwhile, our Semillon is allowed to ripen longer and develop highly textural characters typical of the variety, evoking lemon granita, fresh ripe fig and crushed peppercorn.
2022 offered good conditions for this blend with moderate temperatures throughout the season. Even though some localized rains accelerated the end of the picking period, all the fruit for this blend was safely tucked in the winery by mid-March.
The grapes were harvested during the cool of nights to maintain maximum freshness. Each of vineyard blocks were pressed and clarified separately then cool fermented in stainless steel to retain the fruit’s natural aroma. The wine was only lightly fined before bottling to retain its vinosity.

Palate
Crisp and clean palate with lashing of fresh tropical fruits of guava and lychee. Green apple and nectarine acidity provides excellent length of flavour.
Food Pairing
Kingfish ceviche with avocado and finger lime dressing.
