Wine Making Notes
Slow ripening up to the 2022 harvest has seen our Sauvignon Blanc picked at the peak of varietal expression, between February and March. We strive to source fruit across the whole Margaret River region, with the northern fruit offering intense tropical characters while the southern picks add refined focus and length to the final blend. Our Sauvignon Blanc is usually the first grape to come into the winery at the peak of its freshness, with aromas ranging from cassis bud to guava coulis.
The grapes were harvested during the cool of nights to maintain maximum freshness. Each of vineyard blocks were pressed and clarified separately then cool fermented in stainless steel to retain the fruit’s natural aroma. The wine was only lightly fined before bottling to retain its vinosity.

Enhanced aroma of lime, passionfruit, melon and sweet, dried herbal notes.
Palate
The palate exhibits citrus and tropical fruits, with subtle basil and mint, on the back of the palate. There is a balance of pleasant viscosity of this ripe fruit, with just the right amount of natural acidity, leaving a fresh and juicy, lingering palate.
Food Pairing
Serve this wine slightly chilled with Baked Whiting in a Cheese and Herb crumb, or Potato and Lentil Curry.
