The fruit for this wine was sourced from one of oldest vineyards in Margaret River. The 2020 vintage experienced a mild spring and a warm summer which lead to a long, slow ripening period, allowing maximum flavour development of the berries whilst maintaining vibrant acidity. The grapes were harvested in the cool of the night in March, then pressed on arrival at the winery, the juice is then left to settle overnight before being racked. The wine was fermented in stainless steel tanks at low temperatures using Alsace yeast strain to retain the fresh primary floral and citrus varietal characters.
Lifted aromas of lime, and notes of lavender and citrus blossom
The palate reflects the aroma with flavours of lavender, zesty, lime and lemon, with crisp acid finish.
Oysters Kilpatrick or Oysters with a Mignonette sauce
Contains Sulphites. Fined with the aid of skim milk products. Traces may remain.
