Oysters with Mignonette Sauce

▢ a dozen of shucked oysters (we recommend Oyster Harbour oysters)

Mignonette Sauce
▢ 1/2 cup minced shallots (about 2 1/2 ounces)
▢ 1/4 cup white vinegar
▢ 1/4 cup unseasoned rice vinegar
▢ 1/2 tsp sugar
▢ 1/2 tsp salt
▢ 1 1/4 teaspoon finely crushed white peppercorns


  1. Finely mince Shallots
  2. Stir in white vinegar, rice vinegar, sugar, salt
  3. Cover with plastic wrap and chill for a minimum of 4 hours.

Serve oyster with a teaspoon of mignonette sauce and enjoy with a glass of Miles from Nowhere Riesling.
