Wine Making Notes
Our 2020 vintage started two weeks early, this was due to the warm summer season leading up to vintage and these conditions carried on through the ripening stages. Our Cabernet sauvignon parcel are a combination of spur and cane pruning depending on sites, trained as VSP (vertical shoot positioning). For our Merlot parcel, we prefer cane pruning. Both varieties are picked when the fruit is ripe and most expressive, with a special attention given to the tannic structure of the cabernet.
Each parcel of fruit is fermented separately with daily tasting to best tailor the extraction and length of time on skins. After the primary fermentation is complete, the wines are pressed then matured in bespoke combinations of French and Hungarian oak to suit each parcel, for a period of 15-18 months. The blend is only assembled after individual assessment of each batch and barrel to ensure this classic blend displays the best characteristics of its noble varieties.

Lifted aromas of blueberry compote and cassis, with a dried mint lift balanced with a sweet vanilla oak note.
Palate
Ripe Mulberry and blackberry complemented with notes of cedar and mocha. Finishing with a silky length of integrated tannins and subtle oak.

Butterflied Lamb leg with an herb and pomegranate cous-cous salad
