2016 Best Blocks Shiraz

Vintage & Varietal: 2016 Shiraz

Winemaker's Notes: The best blocks of Shiraz fruit in our vineyard, was harvested to produce this limited production. Following harvest the fruit was crushed with the rollers set apart, allowing some berries to remain whole for fermentation. The must was transferred to a stainless steel fermenter for primary fermentation where approximately 10% of the juice was “drained off” to concentrate the must. The ferment was allowed to reach a maximum of 28°C during its course. After seven days when the wine was almost dry the must was pressed, transferred to oak and inoculated for malolactic fermentation. A combination of French and American barriques were used during the maturation of this wine. After approximately 18 months of maturation the best barrels were selected and blended, before receiving a light fining prior to final filtration and bottling.

Oak: Predominantly new French Oak.

Cellar: Drink now or cellar for up to 8 years.

Aroma: Tremendously aromatic with bright fruit intensity. Maraschino and mixed red fruit aromas are layered with freshly cracked white pepper and spice, with hints of mocha and vanillin oak.

Palate: This Shiraz is uniquely Margaret River, with an incredible combination of fruit, spice and lingering fine grained tannins. The palate is rich and velvety, driven by pure and vibrant flavours of ripe blackberry and cherry. The fruit intensity is infused with soft cinnamon and clove spice, milk chocolate and green peppercorn characters. The finished wine is balanced with a lingering fruit flavours.

Food Pairing: Stilton sirloin burgers with onion jam and sweet potato fries.
